Fried noodles with prawns & tofu


My mother-in-law was renowned for her fantastic culinary skills, so as a result I don’t attempt to try and cook Indonesian dishes. I stick to Finnish fare as I feel I was born with that skill and years of seeing and smelling Finnish food being made has given me an inside edge. I know the Indonesian taste well, I have spent many years travelling in Indonesia (last count I had been to Jakarta over 20 times), but the cooking skills I have left alone. I think I would have a tough critic in my husband, he is fiercely loyal to the taste of Indonesian food.

Last week I bought some fried noodles for lunch. They were good, real good. And as I was eating them I was thinking, I can make this! So I did.

Now I won’t call my dish mee goreng as I was lacking the right ingredients, and I know if my husband stumbles across this he will say “That’s not mee goreng!” so I will simply call them fried noodles. Which translates to mee goreng. Ahem.

Ingredients:
440g egg noodles
12 large prawns, shelled and deveined
1 pack of fried tofu, cut into bite size pieces
2 eggs, lightly beaten
2 cloves of fresh garlic, diced
1” piece of fresh ginger, grated
3-4 stalks of spring onion, sliced
2 tbs oil

To make the sauce: (I am not good at measuring, I just put how much I think feels right, but I tried to estimate measurements for you.)
1 tbs soy sauce
2 tbs kecap manis (sweet soy sauce)
2 tbs sambal oelek (or good chilli sauce will suffice)
1 tsp white sugar
Pinch of salt
Combine well and set aside.

Place egg noodles into a pot of boiling water to separate, remove after 3-4 minutes and strain. Set aside.


Heat a wok and add oil. Add egg to wok and scramble for about two minutes, remove from wok. Add garlic and ginger to wok and fry until fragrant. Add prawns and fry until pink and no longer transparent. Increase heat and add sauce mixture, egg and noodles and combine well. Cook for about 5 minutes, ensuring it does not stick to the wok. Add tofu and spring onion, mix well. Serve and top with fried shallots.


If this was mee goreng I would say ‘enak banget’, but since it is simply fried noodles I’ll say ‘very tasty’!

  1. Ooh, looks yummy. I never buy egg noodles for some reason, and always have a cupboard full of rice noodles. But I might add them to my shopping list this week to make this...

    1. Get the fried tofu Nat, it's almost meaty (not quite but don't tell hubby that). My meat eating hubby loves it!

  4. I was so excited to see this post because mee goreng is one of my favorite take-out dishes to order! I've never tried to make it at home though. This seems like a delicious, simple version that I will definitely attempt soon.

    1. I'm the same Sonali, I often buy noodle dishes as I don't cook them. But after realising how easy it is I will be definitely cooking them more often. There are loads of variations but this one is super simple! Enjoy! Let me know how they go.

    1. Definitely! I think traditionally mee goreng would actually be with chicken, I just added prawns as they're my new obsession. Let me know what you think if you try it out Leanne. :)

  8. I would call this Mie Goreng!! Simple and yummy! I loooove Mie Goreng! But it's hard to find a decent egg noodle here. So if I want to make Mie Goreng I use Indomie only for the noodle, and made the sauce by myself not using the instant one :).

    1. YES!! Is there anything else I can add to the sauce Dinky? I asked my hubby but he gave it 10.5 out of 10, so I guess he thought the flavour was spot on. I made rice noodles last night, also nice but egg noodles are my favourite! Good idea using Indomie as a substitute.
