Roasted capsicum & feta fritters


Since I lost interest in meat in my diet I have started to become quite adventurous with vegetable dishes, frequently trying out new things and cooking with veges I haven't ever considered cooking before. And then every so often I come across a really simple vege meal idea. These fritters took me all of about 15 minutes to prepare. Winner.
Ingredients:
2 red capsicum, roasted and chopped
1 red onion, diced
Small bunch coriander, shredded
100g feta, crumbled
1 egg
1 tbs balsamic vinegar
Freshly ground sea salt & pepper
¼ cup plain flour
Mix together capsicum, onion, coriander, feta, egg and balsamic vinegar in a bowl. Season with sea salt and pepper. Mix in flour to achieve fritter consistency, adding more if needed.

Heat a shallow frying pan with oil, scoop spoonfuls of mixture into the hot oil and cook until golden brown (2-3 minutes) then turn.
Place onto paper towel and blot off excess oil. Serve with an awesome summer salad.

  8. All good, except for the coriander, can't do it. Maybe I could substitute with another herb. They do look sensational though Peggy, love the colours. Yum! :o) xo

    1. Jules you could substitute the coriander with parsley. Other fritter recipes I have seen have parsley in them, but I am mad about coriander and add it to most of my recipes that call for herbs. :)

  9. These are gorgeous and sound so flavorful. I also am trying new veggie recipes. I have two questions. Are the capsicums the same as red bell pepper? And is the bunch of coriander the same as cilantro? (which I love but my family can't stand).

    1. Hello Jodda, yes capsicums are the same as red bell peppers and coriander is cilantro. You could substitute the coriander for another herb like flat leaf parsley if you have that. You could even make these without any herbs added as the feta and peppers are both quite strong flavours. I hope you like them! And thank you for stopping by. :)

  13. I made these today and they were a hit with hubby and his friend. I used parsley instead of coriander as I don't like it. Highly recommend!

    1. Pretty nice and easy hey! I am mad on coriander so I add that to pretty much everything, but parsley is ideal for fritters. I love that the 'cooker' is now trying MY recipes! How things have turned. xo
